What it is

Kashmiri chilli powder is ground from a long, wrinkled, mild red chilli. It gives a vivid red colour with gentle heat, so it is used generously where ordinary chilli powder would be too hot. Deggi mirch is a similar blend of mild red chillies. It sits between paprika and hot chilli powder.
