Method

  1. Step 1

Poach the chicken in the water with half the salt until cooked, about 35 minutes. Lift out, keep 600 ml of the broth and cut the meat into pieces (skin and bones off if you like).

Food safety: Poultry must reach 74 °C; chill the cooked chicken within 2 hours.

  2. Step 2

Soften the onion (opens in a new tab) in the butter (opens in a new tab) without browning.

  3. Step 3

Blitz the walnuts (opens in a new tab) and garlic (opens in a new tab) to a fine, oily paste, then blend in the onion (opens in a new tab) and the spices. Gradually blend in warm broth until the sauce is like thick cream.

  4. Step 4

Simmer the sauce very gently for 8–10 minutes, stirring, then add the vinegar and remaining salt. It thickens as it cools.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: coriander leaves, pomegranate.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Reheating

  • Served cold; do not reheat.
