How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: green chilli.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • If you can find qurut, soak 4–5 balls (about 150 g) in warm water for a few hours and rub them into a sauce instead of the yogurt and feta.

Common mistakes

  • Soaking the bread too long turns it to mush — assemble just before eating.

Serve with

  • Serve as a shared main with green tea.

Storage

  • Best eaten immediately; the sauce keeps 2 days in the fridge.

Variations

  • Fatir qurutob: Made with flaky, butter-layered fatir bread for a richer dish.
