  2. Step 2

Put the chicken in a pot with the water, bring to a boil and skim well. Add the onion (opens in a new tab), ginger and the spices (in a muslin bag) and poach gently until the chicken is cooked, about 35 minutes. Lift out the chicken, cool and shred the meat.

Food safety: Cook chicken until no pink remains and the juices run clear (74 °C in the thickest part).

  3. Step 3

Return the bones to the pot and simmer 40 minutes more. Strain and season with fish sauce (opens in a new tab), sugar (opens in a new tab) and salt.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: makrut lime leaves, bean sprouts, lime, fresh red chilli.
  • Star anise / anise: Anise seed (FDC 171316) used as a stand-in for star anise.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Poaching gently rather than boiling keeps the broth crystal clear and the chicken silky.

Common mistakes

  • Over-spicing: chicken pho is lighter than beef pho, so go easy on the star anise and cinnamon.

Serve with

  • Hanoians eat it with a squeeze of lime and a little chilli vinegar.

Storage

  • Broth keeps 3 days refrigerated or 3 months frozen; store noodles and chicken separately.

Reheating

  • Bring the broth to a rolling boil before serving.
