How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: parmesan, basil.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • A parmesan rind simmered in the broth adds lots of savouriness — remove it before serving.

Common mistakes

  • Cooking the pasta in the soup long before serving: it swells and turns soft. For leftovers, cook pasta separately.

Serve with

  • Serve with crusty bread, or a spoonful of pesto stirred into each bowl (Genoese style).

Storage

  • Keeps 4 days in the fridge; freeze without the pasta for up to 3 months.

Reheating

  • Reheat gently, adding water as it thickens on standing.

Variations

  • Minestrone alla genovese (Italy): Finished with a spoonful of basil pesto.
