Method

  1. Step 1

Steep the Earl Grey (opens in a new tab) in the just-boiled water (95–100 °C) in a mug for 4–5 minutes so it is strong enough to stand up to the milk (opens in a new tab). Remove the leaves and stir in the sugar (opens in a new tab).

  2. Step 2

Meanwhile heat the milk (opens in a new tab) to about 65 °C (steaming, not boiling) and froth it with a frother or steam wand until it has a soft foam.

  3. Step 3

Pour the milk (opens in a new tab) into the tea, holding back the foam with a spoon, then spoon the foam on top.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): earl grey tea leaves.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • A few dried culinary lavender buds steeped with the tea give a popular floral twist.

Common mistakes

  • Under-steeping the tea — with this much milk, a weak brew tastes only of milk.

Storage

  • Make to order.
