Method

  1. Step 1

Scrub the limes (opens in a new tab) well, since the peel goes into the blender (opens in a new tab). Trim the ends, quarter them and cut out the white strip of pith in the centre of each quarter.

  2. Step 2

Pour the cold water and sugar (opens in a new tab) into the blender (opens in a new tab), add the limes (opens in a new tab) and pulse 4–5 times, for no more than 10 seconds in total. Longer blending pulls bitterness from the pith.

  3. Step 3

Immediately strain through a sieve into a jug, pressing lightly. Rinse the blender (opens in a new tab).

  4. Step 4

Return the strained liquid to the blender (opens in a new tab) with the condensed milk (opens in a new tab) and the ice and blend until frothy. Serve straight away.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Ice: Frozen water; same composition as water.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Serve within 15 minutes: the peel keeps releasing bitter compounds as it stands.

Common mistakes

  • Blending the limes for a long time, or leaving the pith in — both make the drink bitter.

Storage

  • Does not keep well; make it just before serving.
