How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: cumin, dill.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Add the liver last — it toughens and turns grainy if cooked as long as the meat.

Common mistakes

  • Crowding the pot when browning — the meat steams grey instead of colouring.
  • Cooking the liver with the meat from the start makes it dry and bitter.

Serve with

  • Serve with flatbread, sliced tomatoes and onions dressed with vinegar, and tea.

Food safety

  • Cook lamb through and liver until no pink remains (70 °C). Refrigerate leftovers within 2 hours.

Storage

  • Keeps 2 days in the fridge.

Reheating

  • Reheat in a covered pan with a splash of water.
