  2. Step 3

Cover and refrigerate 15 minutes (no longer than a few hours) for the flavours to meld. Serve cold on its own or over warm rice with avocado (opens in a new tab).

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: red chilli flakes, short-grain rice, avocado.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Traditional additions include limu (seaweed) and inamona (roasted, crushed kukui nut).

Common mistakes

  • Marinating overnight — the soy cures the fish and turns it firm and salty.

Food safety

  • Keep raw fish at or below 4 °C until serving and discard any left at room temperature for over 2 hours.

Storage

  • Eat the same day; do not keep leftovers of raw fish.
