How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): curry leaves.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Day-old roti works best — it absorbs gravy without turning mushy.

Common mistakes

  • Using too little gravy — the bread stays dry; add a splash more water or curry sauce.

Serve with

  • Serve with extra curry gravy on the side and a cold drink.

Storage

  • Best eaten immediately; leftovers keep 1 day refrigerated.

Reheating

  • Re-fry in a hot pan with a splash of water.

Variations

  • Cheese kottu: Finished with melted cheese, a popular modern street version.
  • Egg kottu: Leave out the chicken and use 2 extra eggs.
