How these numbers were made
- Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
- Optional ingredients are not included: cayenne / chilli powder, raisins, cashews.
- Not counted (tiny amounts or “to taste”): asafoetida.
- “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know
Tips
- The gravy should be thick and glossy, not soupy — reduce it if needed.
Common mistakes
- Adding the yoghurt to a hot pan without stirring — it splits. Keep the heat low and stir constantly until it boils.
Serve with
- Serve with steamed rice, as at a Himachali dham.
Storage
- Keeps 3 days refrigerated.
Reheating
- Warm gently with a splash of water.
Variations
- Rajma or mixed-vegetable madra: Kidney beans, or a mix of vegetables, are cooked in the same yoghurt gravy.
