Method

  1. Step 1

Put the firmer vegetables (plantain (opens in a new tab), carrot (opens in a new tab), beans) in a wide pan with the turmeric (opens in a new tab), salt and water. Cover and cook 6 minutes, then add the pumpkin (opens in a new tab) and cucumber (opens in a new tab) and cook until all are just tender with little liquid left.

  2. Step 2

Pulse the coconut (opens in a new tab), green chillies and cumin (opens in a new tab) to a coarse paste with a splash of water — don't make it smooth.

  3. Step 3

Fold the coconut (opens in a new tab) paste into the vegetables and cook 3 minutes, stirring gently so the vegetables stay whole.

  4. Step 4

Lift the pan off the burner, fold in the yogurt (opens in a new tab), then drizzle with coconut oil (opens in a new tab), tuck in the curry leaves (opens in a new tab) and cover for 5 minutes so the aroma soaks in.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): curry leaves.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.
