Method

  1. Step 1

Hard-boil the eggs (opens in a new tab) for 9 minutes, cool in cold water and peel.

  2. Step 2

Blanch the pork in boiling water for 3 minutes, drain and rinse. Toss with the shallots (opens in a new tab), garlic (opens in a new tab), pepper (opens in a new tab) and 2 tablespoons of fish sauce (opens in a new tab).

    • 8 min
  3. Step 3

In a heavy pot, melt the sugar (opens in a new tab) with a splash of the water until it turns deep amber. Add the pork and stir until coated and lightly browned.

Food safety: Molten caramel causes serious burns.

  4. Step 4

Pour in the coconut water (opens in a new tab) and remaining fish sauce (opens in a new tab), bring to a simmer, skim, then cover partly and braise very gently for 1 hour.

Good to know

Tips

  • It tastes even better the next day; chilling also lets you lift off the fat.

Common mistakes

  • Boiling rather than barely simmering makes the pork tough and the eggs rubbery.

Serve with

  • Serve with rice, pickled mustard greens and canh chua.

Storage

  • Refrigerate for up to 5 days.

Reheating

  • Reheat gently on the stove until piping hot.
