Pour the tea from a height into a second jug, then back again, five or six times, until a thick froth forms. Serve at once in glasses.

    • 2 min

Food safety: Practise the pull with cool water first; hot tea scalds.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Not counted (tiny amounts or “to taste”): black tea leaves.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Start pouring from a low height and lift as you gain confidence.

Common mistakes

  • Weak tea — the brew must be very strong to stand up to the condensed milk.
  • Pulling from too great a height before you've practised; start low over a sink.

Serve with

  • The natural partner to roti canai and nasi lemak.

Storage

  • Drink immediately.

Variations

  • Teh halia: Simmer a few slices of ginger with the tea.
