How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Dashi: Home-prepared fish stock (FDC 172885) used as a stand-in for katsuobushi-kombu dashi; both are very low in energy.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Restaurants season clear soups with a few drops of light (usukuchi) soy sauce; salt alone keeps it wheat-free and crystal clear.

Common mistakes

  • Boiling the soup clouds the dashi; keep it just below a simmer once the tofu goes in.
  • Over-seasoning: suimono should taste of the dashi, with salt only just noticeable.

Serve with

  • Serve at the start of a meal or alongside rice and grilled fish.

Storage

  • Best fresh; refrigerate up to 2 days.

Reheating

  • Warm gently.

Variations

  • Kakitamajiru: Thicken lightly with starch and drizzle in beaten egg to make egg-drop clear soup.
