  4. Step 4

Roll the dough into thin ropes and pinch off grape-sized pieces. Press each one with your thumb against your palm to make a small, thin cup shape and drop it into the boiling soup.

    • 12 min
    • medium-high heat

The thumb-press gives the skyu a thin centre so it cooks through evenly.

  5. Step 5

Simmer until the dumplings are cooked through and the soup has thickened slightly from their flour. Stir in the spinach (opens in a new tab) for the last 2 minutes and serve with coriander.

    • 10 min
    • medium heat

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

Good to know

Tips

  • Dust the skyu with flour as you shape them so they don't stick together.

Common mistakes

  • Making the dumplings too thick — press them thin so they cook through in the broth.

Serve with

  • A complete meal in a bowl; some families add a ladle of milk or a little meat.

Storage

  • Keeps 2 days refrigerated; it thickens as it stands.

Reheating

  • Thin with hot water and reheat until simmering.
