How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: black pepper, bay leaves.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Slice the onions as thinly as possible — a mandoline helps — so they pickle quickly.

Common mistakes

  • Using a reactive metal container; use glass for vinegar pickles.

Serve with

  • Pile onto tacos, grain bowls, avocado toast, burgers or the lentil bowl.

Food safety

  • A fridge pickle, not a canned one: it is not shelf-stable, so keep it refrigerated and use a clean fork each time.

Storage

  • Keeps in the fridge, covered with brine, for up to 2 weeks.

Variations

  • Cebollas encurtidas (Mexico): Use lime and bitter-orange juice instead of vinegar with a little oregano, as in the Yucatán.
