Method

  1. Step 1

Rub the soaked beans between your palms in plenty of water so the skins float off; skim them away and repeat until the beans are mostly skinless.

    • 20 min
  2. Step 2

Blend the beans with the onion (opens in a new tab), chilli and enough water to make a smooth, thick batter that falls slowly from a spoon.

  3. Step 3

Warm the palm oil (opens in a new tab) just until liquid, then beat it into the batter with the salt and the spinach (opens in a new tab) until evenly orange.

    • 5 min
    • low heat
  4. Step 4

Soften the banana leaves (opens in a new tab) over a flame or in hot water. Spoon the batter onto them, fold into tight parcels and tie or tuck the ends.

    • 10 min
  5. Step 5

Steam the parcels over simmering water, topping up the water as needed, until firm and set all the way through. Rest 10 minutes before unwrapping.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: spinach.
  • Not counted (tiny amounts or “to taste”): banana leaves.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.
