How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

Good to know

Tips

  • Fry the mince before the vegetables so it browns rather than stews.

Common mistakes

  • Crowding the pan with mince, which releases water and turns grey instead of browning.

Serve with

  • With bread, yogurt and sliced tomatoes; skip the bread for a low-carb meal.

Storage

  • The meat base keeps 2 days in the fridge; add fresh eggs when reheating.

Reheating

  • Reheat the meat until piping hot before cracking in the eggs.

Variations

  • Scrambled: Beat the eggs and stir them through the meat for a menemen-like texture.
