Vegetarian

Pour-over coffee brewed hot straight onto ice, so it chills instantly and keeps its bright, aromatic flavour. About 40% of the brewing water is replaced by the ice.

Method

  1. Step 1

Put 180 g of ice in the carafe or jug and set the dripper with a paper filter on top. Rinse the filter with a little hot water, then tip that rinse water out (lift the dripper so it doesn't fall on the ice).

  2. Step 2

Add the coffee, level it and set everything on a scale. Pour 60 g of water at 92–96 °C to wet all the grounds and let it bloom for 30–45 seconds.

  3. Step 3

Pour the rest of the 300 g of water slowly in circles, keeping the bed covered. Everything should drain in about 2½–3½ minutes.

A slightly finer grind than for hot pour-over makes up for the smaller amount of hot water.

  4. Step 4

Swirl the carafe until the ice has melted into the coffee, then pour over fresh ice in glasses.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Finely ground coffee: Instant coffee powder used as a stand-in for the soluble part of roasted ground coffee; list the grams actually consumed with consumedGrams.
  • Ice: Frozen water; same composition as water.

Good to know

Tips

  • Total ratio is 1:16 (30 g coffee to 480 g water and ice); keep it that way when you scale.

Common mistakes

  • Brewing normal-strength hot coffee and pouring it over ice — it ends up weak and watery.

Storage

  • Best within an hour; it loses aroma in the fridge.
