Method
Step 1
Bring the water to the boil and let it rest for about 30 seconds (92–96 °C). Rinse the paper filter in the cone with hot water to warm it and remove papery taste; discard the rinse water.
Step 2
Add the coffee, shake it level and set the cone and mug on a scale. Start a timer and pour about 30 g of water to wet all the grounds. Let it bloom for 30–45 seconds.
Fresh coffee puffs up as it releases gas; very old coffee barely blooms.
Step 3
Pour the rest slowly in circles, in two or three stages, to 250 g total, keeping the water level steady and avoiding the paper edges.
- 2 min
Step 4
Let it drain; the total time should be about 2½–3½ minutes. Swirl and serve.
- 1 min
Much faster and sour: grind finer. Much slower and bitter: grind coarser.

Good to know
Tips
- Keep the ratio (1:16) when brewing more: 30 g coffee to 500 g water for two mugs, with a slightly coarser grind.
Common mistakes
- Pouring straight down the paper edge, which lets water bypass the coffee.
Storage
- Drink within 20–30 minutes; reheating dulls it.
