  1. Step 1

Boil the sugar (opens in a new tab) and water with the cinnamon (opens in a new tab) stick and cloves (opens in a new tab) until it forms a light syrup.

  2. Step 2

Remove the cloves (opens in a new tab), stir in the coconut and lemon zest (opens in a new tab) and simmer, stirring, until the coconut is translucent and most of the syrup is absorbed.

    • medium-low heat
  3. Step 3

Beat the yolks in a bowl, whisk (opens in a new tab) in a ladle of the hot coconut to temper them, then pour back into the pan. Stir over very low heat until thick and glossy.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: lemon zest.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Freshly grated coconut gives a softer, juicier cocada; desiccated coconut works but absorbs more syrup.

Common mistakes

  • Adding cold yolks straight to the hot pan scrambles them — temper first.

Storage

  • Keeps 4 days covered in the fridge.
