How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: yogurt, coriander leaves.
  • Garam masala: Curry powder (FDC 170924) used as a stand-in; both are ground blends of similar dried spices used in teaspoon amounts.

Good to know

Tips

  • High heat and constant stirring at the end give karahi its signature 'bhuna' (well-fried) texture.

Common mistakes

  • Adding water — the sauce should come only from the tomatoes and chicken.

Serve with

  • Serve straight from the karahi with naan or roti and a salad of onion and lemon.

Storage

  • Keeps 3 days refrigerated or 2 months frozen.

Reheating

  • Reheat until piping hot, adding a splash of water if needed.

Variations

  • Mutton karahi (Pakistan): Use goat or lamb on the bone and cook covered until tender before reducing.
  • Kadai chicken (India): The Indian restaurant style adds onions, capsicum and a ground kadai masala.
