Tempering

Method

  1. Step 1

Soak the rinsed moong dal (opens in a new tab) for 1–2 hours, then drain thoroughly.

    • 2 min
  2. Step 2

Shred the cabbage (opens in a new tab) as finely as possible and mix it with the dal, carrot (opens in a new tab), coconut (opens in a new tab), green chilli (opens in a new tab) and coriander.

    • 10 min
  3. Step 3

Heat the oil, pop the mustard seeds (opens in a new tab), add curry leaves (opens in a new tab) and asafoetida (opens in a new tab), and pour over the salad.

Let the mustard seeds pop fully before adding the rest of the tempering, or they taste bitter and raw.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: carrot.
  • Not counted (tiny amounts or “to taste”): curry leaves, asafoetida.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Tender, tightly packed cabbage gives the sweetest result; skip the tough outer leaves.

Common mistakes

  • Shredding the cabbage thick — it stays tough raw; shred it as finely as you can.

Serve with

  • Serve with rice, saaru and palya.

Storage

  • Unseasoned, keeps 1 day refrigerated.
