Coconut slush

Method

  1. Step 1

Set the phin filter with the coffee on a heatproof glass. Pour in a splash of just-boiled water, wait 30 seconds for it to bloom, then fill the chamber and let it drip for about 5 minutes.

No phin? Use 2 double espressos or 60 ml strong moka-pot coffee.

  2. Step 2

Blend the cold coconut cream (opens in a new tab), condensed milk (opens in a new tab) and ice until it is a thick, spoonable slush.

  3. Step 3

Spoon the coconut slush into a glass, pour the hot coffee over it (or alongside, for layers) and serve with a spoon and straw.
