Method

  1. Step 1

Heat 2 tbsp oil in a wide pan and fry the okra (opens in a new tab) in a single layer, uncovered, stirring occasionally, until tender and lightly browned. Remove.

Dry okra completely before cutting and don't cover the pan — moisture makes it slimy.

  2. Step 2

Add the remaining oil, crackle the cumin (opens in a new tab) and fry the onions (opens in a new tab) until golden at the edges. Add ginger, garlic (opens in a new tab) and tomato (opens in a new tab) and cook until soft.

    • 7 min
    • medium heat
  3. Step 3

Add the turmeric (opens in a new tab), chilli, coriander and salt, return the okra (opens in a new tab) and toss for 2 minutes. Finish with lemon juice (opens in a new tab) and garam masala (opens in a new tab).

    • 3 min
    • medium heat

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Garam masala: Curry powder (FDC 170924) used as a stand-in; both are ground blends of similar dried spices used in teaspoon amounts.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
