How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: mackerel, peanut butter.
  • Fermented locust beans: Natto (fermented soybeans, FDC 172443) used as a stand-in for fermented African locust beans (iru / dawadawa / soumbala); both are alkaline-fermented, protein- and fat-rich legume seeds. Contains no soy itself.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Without the fish this is fully plant-based — soumbala provides the savoury depth.

Common mistakes

  • Adding the leaves too early — they turn grey and mushy; add them once the rice has softened.

Serve with

  • Serve on its own in bowls.

Food safety

  • Smoked and dried fish should smell clean and smoky, never sour; keep opened packs refrigerated.

Storage

  • Refrigerate up to 3 days.

Reheating

  • Thin with water and reheat gently.
