Blend the almonds (opens in a new tab), soaked bread, garlic (opens in a new tab) and salt with about a third of the water to a very smooth paste.

  2. Step 2

With the motor running, pour in the olive oil (opens in a new tab) in a thin stream so it emulsifies, then add the vinegar and the remaining water.

  3. Step 3

For a silkier soup, press it through a sieve. Taste and adjust salt and vinegar.

Good to know

Tips

  • Blanched almonds soaked in water for an hour blend smoother in an ordinary blender.

Common mistakes

  • Adding the oil too fast, which can leave the soup greasy rather than creamy.

Storage

  • Keeps 2 days chilled; the garlic gets stronger.
