Cabbage

Quarter, cut out the core and shred finely.

Shred

Remove damaged outer leaves.
Quarter through the core.
Cut the hard core out of each quarter at an angle.
Lay flat and slice as thinly as you can across the leaves.

Tips

For coleslaw, salt shredded cabbage lightly, rest, and squeeze to keep it crunchy without watering down the dressing.
