What it is

An English muffin is a small, flat yeast bread made from a soft dough, dusted with semolina or cornmeal and cooked on a griddle rather than baked, giving pale sides and browned tops. It is split with a fork and toasted so the open, holey crumb crisps. It is unrelated to the sweet American cake-style muffin.
