How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: spring onion, lemon.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Some Russian cooks add a small splash of vodka at the end; it is said to sharpen the flavour and clarify the broth.

Common mistakes

  • Boiling the fish hard — it breaks up and clouds the broth.

Serve with

  • Serve with rye bread.

Food safety

  • Keep fish chilled until cooking and cook until opaque (63 °C); refrigerate leftovers within 2 hours and eat within a day.

Storage

  • Best the same day; keeps 1 day chilled.

Reheating

  • Reheat gently just to steaming so the fish does not toughen.
