  1. Step 1

Put the beef and onion (opens in a new tab) in a heavy pot and add water to just cover. Bring to the boil and skim off the foam.

  2. Step 2

Cover and simmer very gently, topping up with hot water if needed, until the meat falls off the bone.

    • 180 min
    • low heat
  3. Step 3

Remove any bones, add the salt and boil uncovered until almost all the liquid has gone.

    • 15 min
    • medium heat
  4. Step 4

Pound and stir the meat in the pot with a heavy wooden spoon until it breaks into fine shreds and soaks up the remaining fat and juices. Serve with pap or bogobe.

    • 10 min

Two forks work if you do not have a heavy wooden pestle.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: onion, cornmeal.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Common mistakes

  • Salting at the beginning toughens the meat; add salt once it is tender.

Serve with

Storage

  • Keeps 3 days in the fridge or 3 months frozen.

Reheating

  • Reheat with a little water, stirring, until piping hot.
