Method

  1. Step 1

Put the sugar (opens in a new tab) and water in a small heavy pan over medium heat. Swirl (don't stir) until the sugar dissolves and turns a deep amber, about 5–7 minutes.

Food safety: Molten sugar is far hotter than boiling water and sticks to skin. Keep children away and never touch or taste it.

  2. Step 2

Take the pan off the heat and pour in the warm cream — it will bubble up fiercely — then stir in the butter (opens in a new tab) and salt until smooth.

  3. Step 3

Divide most of the caramel between two warmed mugs, keeping a spoonful for the top. Pull a double espresso (opens in a new tab) into each mug and stir until the caramel dissolves.

  4. Step 4

Steam the milk (opens in a new tab) to 60–65 °C with a little air for microfoam and pour it into the mugs.

Food safety: Steam wands and freshly steamed milk are scalding: purge the wand away from your hand and wipe it straight after use.

  5. Step 5

Drizzle with the reserved caramel and serve.

    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

    Good to know

    Tips

    • Pull the caramel off the heat as soon as it is amber; it keeps darkening in the hot pan.
    • Make a bigger batch: it keeps 2 weeks in a jar in the fridge.

    Common mistakes

    • Adding cold cream, which seizes the caramel into lumps — warm it first.

    Storage

    • Make to order and drink straight away; milk foam collapses and coffee loses its aroma within minutes.
