How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: ice.
  • Not counted (tiny amounts or “to taste”): almond gum (badam pisin).
  • Nannari syrup: Grenadine syrup (FDC 168088) used as a stand-in for a sugar syrup flavoured with Indian sarsaparilla root (Hemidesmus indicus); brands vary.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • A little almond gum goes a long way: 4 g swells to several tablespoons of jelly.
  • Some Madurai shops also stir in a spoon of thick milk cream (paal khova) before the ice cream.

Common mistakes

  • Letting the reducing milk catch; use a heavy pan and keep stirring.

Storage

  • Soaked almond gum and reduced milk keep 2 days in the fridge, separately.
