How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

Good to know

Tips

  • Squeezing the walnut paste in a cloth releases its oil — a Georgian trick for a glossy finish.

Common mistakes

  • Dressing long in advance — the tomatoes release water and thin the walnut sauce.

Serve with

  • With khachapuri, grilled mtsvadi or shoti bread.

Storage

  • Dressing keeps 3 days in the fridge; dress the vegetables when serving.
