How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • Optional ingredients are not included: white vinegar, worcestershire sauce, cayenne / chilli powder.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • More butter makes it milder; less makes it hotter and sharper.

Common mistakes

  • Boiling the sauce once the butter is in, which breaks the emulsion and makes it greasy.

Serve with

  • Fried or baked chicken wings with celery and blue cheese or ranch dip
  • Cauliflower bites
  • Chicken sandwiches

Storage

  • Refrigerate up to 1 week; it solidifies when cold.

Reheating

  • Rewarm gently, whisking to re-emulsify.
