Method

  1. Step 1

Make the grenadine: warm the pomegranate juice (opens in a new tab) and sugar (opens in a new tab) in a small pan, stirring until the sugar dissolves, then simmer gently until slightly syrupy and reduced by about a quarter. Stir in 1 tsp lemon juice (opens in a new tab) and cool. It makes about 160 ml.

Food safety: Hot sugar syrup can cause serious burns; let it cool before tasting.

  2. Step 2

Steep the ginger slices in the 2 tbsp lemon juice (opens in a new tab) while the syrup cools, then remove them.

    • 1 min
  3. Step 3

Fill four glasses with ice. Add the gingery lemon juice (opens in a new tab) and top with sparkling water (opens in a new tab).

    • 2 min
  4. Step 4

Slowly pour about 2 tbsp grenadine into each glass — it sinks and blushes upward — and finish with cherries (opens in a new tab).

    • 2 min

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

Good to know

Tips

  • Real pomegranate grenadine is less cloyingly sweet and more tart than bottled, artificially coloured versions.

Common mistakes

  • Boiling the grenadine hard — it caramelises, darkens and loses its fresh pomegranate flavour.

Food safety

  • Store homemade syrups in sterilised jars in the fridge and discard if mould or fizzing appears.

Storage

  • Grenadine keeps up to 3 weeks in a clean, sealed jar in the fridge.

Variations

  • Roy Rogers: The same grenadine with cola instead of lemon-lime soda.
