  2. Step 2

Leave for at least an hour, ideally overnight in the fridge, so the pepper (opens in a new tab) flavours the vinegar.

    • Step 3

Shake before using. Toss a few spoonfuls through freshly pulled or chopped pork and serve more at the table, or use it as a mop for meat on the smoker.

    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • Optional ingredients are not included: water, cayenne / chilli powder, chilli sauce (sriracha-style).
    • Red chilli flakes: Ground cayenne (FDC 170932) used as a stand-in for dried chilli flakes such as pul biber or Aleppo pepper.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
    • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

    Good to know

    Tips

    • Warm it slightly before tossing through hot pork so it soaks in.

    Common mistakes

    • Expecting a thick sauce — it is meant to be thin and is used as a splash and mop, not a glaze.

    Serve with

    • Pulled or chopped pork shoulder
    • Smoked chicken
    • With coleslaw and hushpuppies

    Storage

    • Keeps in the fridge for up to 1 month.

    Variations

    • Lexington (Piedmont) dip (United States): Western North Carolina style adds a little ketchup and more sugar to the vinegar.
