How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • Optional ingredients are not included: dill, walnuts.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Use sparingly — it is seasoning, not a dip. Thin a teaspoon with oil or plum sauce to brush on meat.

Common mistakes

  • Not squeezing the soaked chillies dry — extra water dilutes the paste and shortens its fridge life.

Serve with

  • Rub on chicken or pork before roasting, stir into lobio (beans), or serve a dab beside grilled meat and cheese.

Storage

  • Refrigerate in a tightly packed jar for up to 1 month.

Variations

  • Green adjika: Made with fresh green chillies and lots of coriander, celery leaf and dill.
