Rough chop diagramRough chop: Irregular pieces of roughly similar size, for things that will be strained or blended. Size about 15–25 mm, irregular. Drawn to scale with a 1 centimetre bar.

How to cut it

  1. Halve or quarter the vegetable so it sits flat.

  2. Cut into pieces of roughly the same size; neatness does not matter.

  3. Keep sizes similar so everything cooks at the same rate.

Why this shape

Fast; the pieces only need to give up flavour or soften enough to blend.

Tips

  • Perfect for stocks, blended soups and pastes — save neat cuts for food you will see.
