Bias cut diagramBias cut: Oval slices cut at an angle for more surface area and a longer, elegant shape. Size 3–6 mm thick, 30–60° angle. Drawn to scale with a 1 centimetre bar.

How to cut it

  1. Hold the knife at 30–60° to the vegetable instead of 90°.

  2. Cut through at that angle, keeping it constant.

  3. Move along at even intervals.

Why this shape

More cut surface means faster cooking and more sauce clinging to each piece.

Tips

  • A steeper angle gives longer ovals — classic for spring onions, celery and gai lan stems in stir-fries.
