Ingredients

1 cup

Method

  1. Step 1

Pull a single long espresso (opens in a new tab) into a warmed 200 ml cup.

  2. Step 2

Steam the milk (opens in a new tab) to 60–65 °C, letting in enough air for a soft, generous foam.

Food safety: Steam wands and freshly steamed milk are scalding: purge the wand away from your hand and wipe it straight after use.

  3. Step 3

Pour the hot milk (opens in a new tab) into the coffee, then spoon the foam on top to form a white cap. Serve on a small tray with the glass of water and sugar (opens in a new tab) on the side.

Good to know

Tips

  • It is milder than an Italian cappuccino; use a single shot rather than a double.

Common mistakes

  • Using a strong Italian-style double shot — the melange is meant to be mild.

Serve with

  • With a slice of Sachertorte, apple strudel or a Kipferl.

Storage

  • Make to order and drink straight away; the milk foam collapses and the coffee loses its aroma within minutes.

Variations

  • Franziskaner (Austria): A melange topped with whipped cream instead of milk foam.
