Method

  1. Step 1

Whisk (opens in a new tab) the cold cream with the icing sugar (opens in a new tab) in a chilled bowl until it holds soft-firm peaks — thick enough to sit on the coffee without sinking.

Stop before it looks grainy, or it turns to butter.

How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.

Good to know

Tips

  • Chill the bowl and whisk in the freezer for 10 minutes so the cream whips quickly.

Common mistakes

  • Under-whipped cream sinks into the coffee instead of floating.

Storage

  • Make to order; the cream melts into the coffee within a few minutes.
