How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: korean rice cakes (tteok), strawberries.
  • Sweet red bean paste: Canned sweetened adzuki beans (FDC 173729) used as a stand-in; home-made or bought anko is usually a little drier and sweeter.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

Good to know

Tips

  • Chill the bowls in the freezer so the ice doesn't melt instantly.

Common mistakes

  • Shaving the ice too far ahead — it melts and clumps. Shave just before serving into chilled bowls.

Storage

  • Serve at once. Keep the frozen milk in the freezer for up to 1 month and leftover red bean paste in the fridge for 5 days.

Variations

  • Fruit bingsu: Top with mango, strawberries or melon instead of red beans.
