Italian

Lungo

Vegetarian

Caffè lungo

A 'long' espresso: more water run through the same puck, to about 1:3 (18 g coffee to 54 g in the cup), for a lighter-bodied, more bitter cup. Unlike an americano, all the water passes through the coffee.

Lungo is an Italian hot drink from Italy, ready in about 4 minutes and made with finely ground coffee. It serves 1 and is rated intermediate to cook.

Ingredients

1 cup

Method

  1. Step 1

Heat the machine (brew water 90–94 °C) and warm a cup.

  2. Step 2

Grind 18 g of coffee, a notch coarser than for your normal espresso, then level and tamp.

A slightly coarser grind stops the long shot from over-extracting and turning harsh.

  3. Step 3

Run the shot to about 54 g in the cup, usually 30–40 seconds.

  4. Step 4

Serve straight away, black or with sugar.

    How these numbers were made

    • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
    • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
    • Finely ground coffee: Instant coffee powder used as a stand-in for the soluble part of roasted ground coffee; list the grams actually consumed with consumedGrams.
    • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.

    Good to know

    Tips

    • If it tastes very bitter or drying, stop it a few grams earlier or grind coarser.

    Common mistakes

    • Confusing it with an americano, which adds hot water after the shot instead of running it through the coffee.

    Storage

    • Drink immediately.
