How these numbers were made

  • Calculated from USDA FoodData Central (SR Legacy) per-100 g values and the listed quantities.
  • *Per 100 g of combined raw ingredients; the cooked dish may weigh more or less.
  • Optional ingredients are not included: apple, ice.
  • Dried purple corn: Yellow corn grain (FDC 170288) used as a stand-in; in chicha morada the cobs are boiled and strained out, so little is consumed.
  • “—” means the value isn’t known for enough of the ingredients; it is never zero by default.
  • Values are estimates for guidance, not for medical dosing. U.S. Department of Agriculture, Agricultural Research Service. FoodData Central, 2019. fdc.nal.usda.gov.

Good to know

Tips

  • Re-boil the corn with a second, smaller batch of water for a lighter 'second' chicha, as many Peruvian cooks do.

Common mistakes

  • Adding the lime while the drink is hot.

Serve with

  • Drink with ceviche, lomo saltado or a Peruvian set lunch; the same base thickened with starch and dried fruit becomes mazamorra morada.

Food safety

  • Keep refrigerated; it can start to ferment within a day or two at room temperature.

Storage

  • Keeps 3–4 days in the fridge.
