Batonnet diagramBatonnet: Chunky sticks, the step before medium-small dice and the shape of thin chips. Size 6 × 6 × 50–60 mm. Drawn to scale with a 1 centimetre bar.

How to cut it

  1. Trim the vegetable into a neat block 5–6 cm long, squaring off the sides.

  2. Cut lengthways into 6 mm planks.

  3. Lay the planks flat, stack two, and cut into 6 mm sticks.

Why this shape

Thick enough to hold its shape through roasting, frying or steaming, thin enough to cook through evenly.

Tips

  • Cut batonnet across into 6 mm pieces to get a small dice.
  • For chips, cut thicker (10–12 mm) — the same method, just wider planks.
