What it is

Chocolate chips are usually semisweet dark chocolate with slightly less cocoa butter or added stabilisers, so they hold a teardrop shape when baked. Chunks are larger and melt into pools. Because they are designed not to flow, they melt less smoothly for ganache or dipping than bar chocolate.
