A small long-handled pot for brewing very fine coffee in water on the hob, as in Turkish coffee.
Specialist · Used on the stovetop · 1 recipe
What it is
A small pot, traditionally copper or brass, with a wide base, narrower neck, pouring lip and long handle. Powder-fine coffee, water and optional sugar are heated together until foaming; the grounds stay in the pot and settle in the cup. It is also called an ibrik or briki.
What it’s for: Brewing unfiltered Turkish, Greek or Middle Eastern style coffee, often with cardamom.
How to use it
- Add cold water, one cup per serving, to the pot.
- Stir in very finely ground coffee and sugar to taste.
- Heat slowly over low heat without stirring further.
- When foam rises to the neck, remove from heat before it boils over; pour slowly to share the foam.
Good to know
- Tasks
- brewing Turkish coffee, warming small amounts of milk or butter
- Cooking methods
- Simmered
- Materials
- copper, brass, stainless steel, enamelled steel
- Care and cleaning
- Rinse with warm water and dry. Copper pots are usually lined with tin; avoid abrasive scrubbers.
- Limitations
- Only makes a few small cups; needs powder-fine grind.
Safety
- Foam rises suddenly and can boil over.
- Long metal handles can get hot near the pot.
If you don’t have one
- Saucepan — The smallest saucepan works, but foam is harder to control.
Equipment guide
How it works: A small pot with a narrow neck heats very finely ground coffee, water and often sugar together. As it nears the boil, foam rises into the narrow neck where it can be watched and lifted off the heat before it boils over; the grounds are served in the cup and settle to the bottom.
| Material | Good | Watch out |
|---|---|---|
| Copper (tin- or stainless-lined) | Very responsive heat for controlling the foam. | Lining wears; needs polishing; not for induction. |
| Brass | Traditional and durable. | Needs lining; heavy. |
| Stainless steel | Durable, non-reactive, dishwasher-safe, does not hold smells. | Can scratch non-stick pans; conducts heat, so all-metal handles get hot. |
| Ceramic | Non-reactive. | Slow and can crack. |
