Brunoise diagramBrunoise: The smallest even dice — tiny cubes cut from julienne. Size 3 × 3 × 3 mm (fine brunoise: 1.5 mm). Drawn to scale with a 1 centimetre bar.

How to cut it

  1. Cut the vegetable into julienne (3 mm sticks).

  2. Gather a small bundle of sticks, lined up evenly.

  3. Cut across the bundle at 3 mm intervals, keeping your guiding hand in a claw.

Why this shape

Tiny cubes give colour and crunch to every spoonful and melt into sauces without leaving chunks.

Tips

  • Work in small bundles so the sticks don't splay.
  • Brunoise is worth it for raw salsas and garnishes; for a cooked sauce base a quick fine chop is usually enough.
